JENNIVINE'S ENGLISH TRIFLE 
4 egg yolks
3/4 c. sugar
1 tbsp. vanilla flavor
1/2 pt. half and half
Cooked sponge cake or yellow cake
3 choices of favorite fruit (1/2 pt. each), washed and sliced
Favorite marmalade or jam (Jennivine's Pumpkin or Strawberry Jam)
1/2 c. dry sherry

In a double boiler whip together first 4 ingredients. This must cook until smooth and creamy. (It is best to stir with a rubber spatula at this stage.) Stir frequently. While this is cooking, put a tablespoon of jam at the bottom of the glasses. Top this with a 1- inch square of cake.

Soak each cake with 1 tablespoon of dry sherry. Put first of 3 fruits in glasses (do not pack the fruit). Then cover with sauce. Put the second fruit and then cover with sauce. Third fruit and cover with sauce. Finish with topping, then garnish.

TOPPING (SHERRY CREME FRAICHE) :

1/2 pt. whipping cream
3 tbsp. sherry
1/4 c. sugar
1 tbsp. vanilla

Whip all ingredients until smooth.
