PEPPER STEAK 
1 1/2 to 2 lbs. round steak, cut into strips
4 green peppers
1/2 c. chopped onion
3/4 c. chopped celery
1/2 tsp. salt
Pepper to taste
1 stick butter
1 tbsp. soy sauce
1 can (10 1/2 oz.) beef consomme
2 tbsp. cornstarch

Melt butter in skillet; brown steak. Add onion, green pepper, consomme, 1/2 can water, soy sauce and chopped celery. Cook for 30 minutes at low temperature. Add cornstarch and cook for another 5 minutes. Serve over rice or chow mein noodles. Makes 4 servings.
