SPINACH, CHICORY AND GRAPEFRUIT
SALAD
 
1/2 c. mayonnaise
3 tbsp. honey
2 tbsp. poppy seeds
1 tbsp. cider vinegar
1/4 tsp. salt
1/8 tsp. ground red pepper
4 oz. fresh spinach
1/2 sm. head chicory
2 pink grapefruit, pared and sectioned
1 sm. red onion, sliced thin

In small bowl, stir together mayonnaise, honey, poppy seeds, vinegar, salt and red pepper; cover and chill until time to serve. Tear spinach and chicory into bite-size pieces; place in large bowl. Add grapefruit and onion. Just before serving, pour dressing over greens and gently toss to coat. Serves 6.
