INDIA RELISH 
8 qt. tomatoes
1 head cabbage
6 lg. onions
3 green peppers
3 red peppers
1 1/2 c. non-iodized salt
2 qt. vinegar
8 c. sugar
Celery seed
1 spice bag

SPICE BAG:

2 sticks cinnamon
2 tbsp. whole cloves
2 tbsp. cardamom seeds

Grind green tomatoes, cabbage, onion, green peppers, and red peppers. Add non-iodized salt. Let stand overnight.

The next day, drain and add the vinegar, sugar, celery seed and the spice bag. Bring to boil and boil 35 minutes. Remove spice bag. Pack hot relish into hot jars and seal. Process 10 to 15 minutes.
