CABBAGE PATCH STEW | |
2 lbs. hamburger (or more, if desired) 1 medium onion, chopped 1 cup celery, chopped 1/2 cup bell pepper, chopped Salt and pepper to taste 1 or 2 cans of tomatoes (mashed) 2 cans kidney beans 2 cans chili beans 1/2 small head of cabbage, shredded (no more than 2 or 3 cups) Use liquid with all canned items. In a large pot with a lid steam the hamburger, onion, celery, and pepper until meat loses its pink color. Break up meat with fork into bite size pieces. Remove the lid and add all remaining ingredients EXCEPT the cabbage. Bring mixture to a boil and add cabbage, just pressing it under the liquid. Season cabbage with salt and pepper to taste. Cover and simmer about 20 minutes. This is a meal in itself. Serve with cornbread or crackers. It keeps for several days in the refrigerator and also freezes well. |
