FRESH PEA SOUP 
10 oz. pkg. frozen peas
1/2 c. chopped leaks
10 spinach leaves
10 lettuce leaves
10 3/4 oz. can chicken broth
Pepper
3/4 c. light cream
2 tbsp. butter

Simmer peas, onions, spinach, lettuce, broth and pepper covered for 20 minutes. Pour into blender. Cover and process until smooth. Sieve soup back into pan. Add cream and butter. Heat but do not boil. Serve with croutons. NOTE: Can make with broccoli, zucchini and cauliflower.
