CILANTRO-LIME POTATOES 
2 lb. medium size new potatoes, washed and quartered
2 tbsp. butter
3 tbsp. olive oil
4 cloves minced garlic
4 tbsp. fresh lime juice
2 tsp. ground coriander
1 bunch green onions with some tops, chopped
1 c. chopped cilantro leaves
1 tbsp. chili powder
salt and freshly ground pepper
1/4 c. shredded Parmesan

Cover potatoes with cold, salted water and bring to a boil; reduce heat and simmer about 12 minutes. Don't overcook. Meanwhile, in a small saucepan, melt butter and olive oil along with garlic, lime juice and coriander. Drain potatoes and toss with garlic butter. Add onions, cilantro, chili powder, salt and pepper. Serve hot or at room temperature. Sprinkle with Parmesan.
