IMPOSSIBLE TUNA AND CHEDDAR PIE | |
2 c. chopped onions, optional 2 tbsp. butter 2 (6 1/2 oz.) cans tuna, drained 2 c. shredded cheddar cheese 1 c. milk 3 eggs 1 c. Bisquick baking mix 1/4 tsp. salt 1/8 tsp. pepper 2 tomatoes, thinly sliced Heat oven to 400 degrees. Grease 10-inch pie plate. cook onions in butter in skillet until onions are light brown. Sprinkle tuna, 1 cup of the cheese and the onions in plate. Beat eggs, milk, baking mix, salt and pepper until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into pie plate. Bake until knife inserted in center comes out clean, 25-30 minutes. Top with tomato slices and remaining cheese. Bake until cheese is melted, 3-5 minutes longer. Cool 5 minutes. Yield: 6-8 servings. |
