CARROT BREAD | |
2 c. flour 2 tsp. baking soda 2 tsp. cinnamon 1/4 c. nut meats 1 c. Wesson oil 1 1/2 c. sugar 2 c. grated carrots 3 eggs 1 c. raisins Or 1/2 c. coconut shredded & 1/2 c. raisins Sift flour, salt and cinnamon together. Make a well in dry ingredients; in mixing bowl. Place nuts, oil, vanilla, sugar, carrots and raisins or coconut-raisin combination. Pour in a well greased loaf pan. Let stand 20 minutes before baking. Bake at 350 degrees for about 1 hour. Let cool before slicing. |
