AU GRATIN POTATOES 
4 c. cooked, cubed potatoes
1/2 c. flour
1/2 c. butter
2 c. milk
1 c. Velveeta cheese
1 green pepper, cut fine
1 sm. onion, chopped

Make white sauce (flour, butter, milk, salt and pepper). Add most of the cheese, cut up potatoes, green pepper and onions. Place in buttered casserole and scatter remaining cheese on top. Heat in 325 degree oven (slow oven) for 1 hour. Can be made ahead and frozen.
