STUFFED EGGPLANT | |
2 eggplants 1 lb. ground meat 1/2 onion 2 c. tomato sauce 1 c. Italian flavored bread crumbs Wash eggplant and cut off the ends. Cut into halves lengthwise. Scoop out the inside of eggplant so it looks like a boat. Saute the inside cubed eggplant along with onion. Brown the ground meat. Add to eggplant. Add bread crumbs. Add 1/2 cup of sauce. Stuff the eggplant with the mixture. Put in a casserole dish and put a little water in bottom of dish. Cover with remaining sauce. Cover with foil. Bake at 350 degrees until tender. |
