NO SUGAR ADDED - OATMEAL CHIP
COOKIES
 
1 1/2 c. oatmeal (uncooked)
3/4 c. plain flour (whole-wheat pastry flour is best)
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
2 sticks unsalted butter
1 tbsp. Smuckers sugar-free syrup
1 egg
1 1/2 tsp. vanilla extract
1/2 c. chips (chocolate, white chocolate or butterscotch)
1/2 c. chopped pecans (optional)

Preheat oven to 350°F. In a bowl, mix dry ingredients and set aside. In a large bowl, mix the butter and syrup, then beat in the egg and vanilla extract. Stir in the dry ingredients until mixture is well blended. Fold in chips. Add chips and nuts (if desired) and mix. Drop tablespoons of dough onto a greased cookie sheet.

Bake 8 to 10 minutes or until lightly browned. Cool on a wire rack.

Turned out very dry. Used old-fashioned oats since recipe didn't specify. Also could be a tad sweeter tasting. Maybe 2 tbsp. of syrup next time.
