POTATO LATKES 
These yeast-raised potato pancakes are very light and delicious, not at all greasy.

1 tbsp. active dry yeast
1 c. warm milk, stock, or water
1 egg, beaten
1 tbsp. oil
1 c. coarsely grated potato
1 tsp. salt
1/2 c. whole wheat flour
1/4 c. wheat germ
Optional: 1 tbsp. sauteed onion

Dissolve yeast in liquid. Add egg and oil. Beat in potatoes, salt, flour, wheat germ and onion (if desired). Let rise 30 minutes. Stir down. Cook over medium heat on lightly oiled griddle or dry Teflon pan until browned on each side. Makes 8 pancakes.
