GRINDER SANDWICH PASTA SALAD 
A fun spin on the popular "Grinder Sandwich"!

PASTA SALAD:

1/2 lb. rotini pasta
1/2 head Iceberg lettuce
4-5 jarred pepperoncini peppers
4 slices Provolone or Mozzarella cheese
1/2 red onion
4 slices roasted turkey deli meat
8 slices hard salami deli meat

DRESSING:

3/4 cup mayonnaise
1/2 cup red wine vinegar
1/2 tsp. black pepper
1/2 tsp. salt
1 tsp. oregano
1/2 tsp. crushed red pepper flakes

Cook pasta al denté according to package directions. Drain and rinse under cold water.

While pasta is cooking, chop all remaining pasta salad ingredients into somewhat equal-sized pieces.

In a medium bowl, combine the mayonnaise, red wine vinegar, pepper, salt, oregano, and red pepper flakes; whisk until smooth.

In a large serving bowl, toss together all pasta salad ingredients. Pour the dressing over and mix into the salad until well-incorporated.

Serve immediately at room temperature or chill until ready to serve.
