SPECIAL WHITE ICING 
1 lg. tart apple, peeled and grated
1 egg white
1 c. sugar
3 drops lemon extract

Combine all ingredients and beat with electric mixer until stiff enough to stand in peaks. Heap on cake, top and sides.

This icing has a delightfully fresh but elusive flavor that is ideal for any rich cake. This is a same-day icing (best used the day it is made, since it tends to slump with age).
