EGGPLANT PATTIES 
1 med. eggplant
2 eggs, beat slightly
2 tbsp. parsley
1 tbsp. garlic powder
1 garlic bud, minced
1 1/2 c. Ritz cracker crumbs
1 1/4 c. shredded sharp cheese
2 tbsp. green onion (half tops, half onion)
1 tsp. onion powder

Peel, cut and cook eggplant until tender; drain. Mix all ingredients and form into patties. Fry in lest amount of oil.
