COTTAGE CHEESE-NUT CROQUETTES 
2 c. low-fat cottage cheese
2 c. bread crumbs
1/2 c. coarsely chopped pecans
1/4 tsp. paprika
Skim milk to moisten, if needed
1/4 c. chopped green pepper
1 1/2 tbsp. chopped onions
1/2 tsp. salt
1 egg
1/4 c. skim milk
1 c. corn flake crumbs

1. Preheat oven to 325 degrees.

2. Combine first 8 ingredients and mix well. Divide into 10 equal portions and shape into croquettes.

3. Lightly beat together the egg and milk. Dip each croquette into the mixture, then roll in corn flake crumbs.

4. Place croquettes on a greased cookie sheet and bake 25 minutes.

5. Serve with tomato sauce
