KNOBBY PEACH COBBLER 
3 tbsp. shortening (Crisco)
1/4 c. sugar
3/4 c. honey
1 egg, beaten well
2 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. nutmeg
1 tsp. lemon extract
3 1/4 c. diced peaches, drained

Cream shortening and sugar together, gradually adding honey. Mix well. Add egg and mix until smooth. Sift together flour, baking powder, baking soda and nutmeg. Cream both mixtures together. Add lemon extract and peaches and mix well. Pour into a greased 13 x 9 x 2 inch pan. Bake at 350 degrees for 50 to 60 minutes. Cool 10 to 15 minutes. Serve with ice cream if desired.
