APRICOT CHICKEN 
1 env. onion soup mix
1 (8 oz.) bottle Russian creamy dressing
1 (10 oz.) jar apricot preserves
1 (3 lb.) chicken, cut up

Mix first 3 ingredients and pour most of the mixture over the chicken. Pack the chicken tightly in a 13 x 9 x 2 inch baking pan and bake in preheated 350 degree oven for 1 hour or until tender. Baste every 15 minutes with remaining sauce. Serve with hot rice.
