POTATO SALAD 
1/2 c. oil
3 tbsp. vinegar
1/2 tsp. salt
Pepper to taste
3 tbsp. green onion and parsley
1 can green beans, cooked
2 c. ham, chicken or turkey
2 c. chopped watercress
1/2 c. thinly sliced radishes
5 med. potatoes, cooked and sliced

Combine oil, vinegar, parsley, onion, salt and pepper. In bowl, layer warm potato slices and dressing. Cover and let stand at room temperature at least 30 minutes. Before serving, add beans, ham, watercress and radishes. Toss to mix. Makes 4-6 servings.
