RHUBARB DESSERT OR BARS 
BOTTOM:

1/2 lb. butter
2 tbsp. sugar
2 c. flour

Mix like a pie crust. Pat into large cake pan. Bake 10 minutes at 350 degrees.

FILLING:

5 c. finely cut rhubarb
6 egg yolks
2 c. sugar
1/4 tsp. salt
1 c. cream
4 tbsp. flour
Grated rind of 2 oranges

Mix above ingredients and pour over crust. Bake for 40 to 45 minutes at 350 degrees.

TOPPING:

6 egg whites
12 tsp. sugar
2 tsp. vanilla
Pinch of salt

Beat egg whites. Add sugar 2 tablespoons at a time until form peaks. Put on top of bars and sprinkle with shredded coconut. Bake for 10 to 15 minutes at 350 degrees until lightly browned. Cool.
