SURPRISE HAMBURGERS 
2 1/2 lbs. hamburg
1 tsp. salt
1/4 tsp. pepper
4 oz. (about) cheese (sharp, sandwich, etc.)
3/4 lb. sliced mushrooms
6 tbsp. butter
1 c. red wine

Mix hamburg, salt, and pepper. Divide into 6 portions; shape into 2 patties. Cut cheese into 6 pieces; place between patties. Pinch together to seal (if early, wrap in wax paper and chill). Saute mushrooms in 3 tablespoons butter. Remove from pan. Brown patties quickly on both sides in other 3 tablespoons butter. Add mushrooms and wine. Simmer 5 minutes for rare, 8 minutes for well done, basting meat constantly.
