CRANBERRY BREAD 
1 c. whole wheat flour
1 c. all purpose flour
2/3 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
3 tbsp. vegetable oil
4 tsp. grated orange peel
3/4 c. orange juice
1 egg
1 1/3 c. fresh cranberries, coarsely chopped
1/2 c. chopped walnuts

In a large bowl, stir together the whole wheat and all purpose flour, sugar, baking powder and baking soda.

In a small bowl, whisk together the oil, orange peel, orange juice and egg. Add this mixture to the flour mixture, stirring together just to combine. Fold in the cranberries and nuts. Pour the batter into a greased 9 x 5 x 3 inch loaf pan.

Bake the bread in a preheated 350 degree oven for 50 to 60 minutes. Set one pan on a rack for 10 minutes before turning out to cool completely. Wrap the bread well, and let it stand overnight before slicing it.
