PUMPKIN COOKIES 
1/2 c. shortening
1 1/4 c. brown sugar
2 eggs
1 1/2 c. cooked, mashed pumpkin
1/2 tsp. salt
1/4 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. cinnamon
2 1/2 c. cake flour
4 tsp. baking powder
1 c. raisins
1 c. chopped nuts
1 tsp. lemon extract

Cream shortening and sifted sugar thoroughly. Add eggs, pumpkin and seasonings; blend well. Sift flour and baking powder together, stir in raisins and nuts. Add flour mixture to the creamed mixture and beat. Blend in lemon extract. Drop from teaspoon onto greased cookie sheet. Bake 15 minutes at 400 degrees. Yield: 36.
