CREOLE GUMBO 
2 1/2 c. okra
1 lb. brisket, diced
1 bay leaf
3 sprigs parsley, chopped
1/3 c. cooking fat
1/2 onion, chopped
1/2 lb. ham, diced
2 c. canned tomatoes
6 c. boiling water
2 tbsp. flour
Salt, pepper & cayenne
1 green pepper, chopped

Brown ham and brisket in cooking fat. Remove meat. Brown onion and okra in hot fat. Add flour slowly. Stir until blended. Add meat and remaining ingredients, stirring constantly. Season to taste. Cover. Simmer slowly until meat is tender. Serve hot with steamed rice. 12 servings.
