TEX MEX SKILLET 
1 c. chopped onion
1 c. chopped celery
2 tbsp. oil
1/2 c. rice, uncooked
1 can chili beans (Brook's)
1 c. tomato juice
1 1/2 lb. smoked sausage, sliced
Grated cheese
Nacho chips

In large skillet, saute onion and celery in oil. Stir in rice. Add can of beans and tomato juice, smoked sausage. cover, cook on low heat 20 to 25 minutes until rice is tender. Top with cheese and nacho chips.
