RICE - MUSHROOM CASSEROLE 
1 c. long-cooking rice
1 stick butter
1 (4 or 5 oz.) can sliced mushrooms
1 can beef consomme liquid soup
1 can French onion soup

Into a 1 1/2 quart glass baking dish place the rice, butter, mushrooms and juice and the cans of soup. Cover dish and bake at 350 degrees for 45 to 60 minutes or until liquid is absorbed.

To cut down on calories - omit the butter and add 1/2 cup water instead. Doesn't change flavor only the calories.
