COTTAGE CHEESE ROLLS 
2 pkgs. yeast (2 sm. or 1 larger one)
1/4 c. warm water
1 tsp. sugar
1 egg
1 c. cream cottage cheese (small curd)
1/4 c. butter, melted
1/4 c. sugar
2 1/4 c. flour

FILLING:

3 tbsp. butter, melted
2/3 c. nuts, chopped
2/3 c. brown sugar
1/2 tsp. vanilla, mixed in sugar

Mix yeast, water and a teaspoon of sugar; set aside. Mix egg, cheese, sugar and butter. Mix well. Add yeast mixture and then add flour. Mix until thick, then knead the rest of the flour in. Let raise to double in size. Knead down, roll out like jelly roll, about 1/4 inch thick. Brush melted butter on rolled dough, sprinkle sugar and nuts. Roll like jelly roll. Cut in about 3/4 inch rolls. Put in buttered pans. Let raise. Bake at 375 degrees about 15 minutes or until nice and brown.
