POTATO CASSEROLE SUPREME 
(I make this often and have given it out dozens of times; we have one family that the wife comes for the fresh fish and the husband comes for these potatoes!)

2 lb. frozen hash-brown potatoes, thawed
1 tsp. salt
1/2 tsp. pepper
1/2 c. melted butter
1 can cream of mushroom soup
1 pt. sour cream
1/2 c. chopped onion (or scallions)
2 c. grated Colby cheese

Add salt, pepper and melted butter to potatoes and mix well; mix the next 4 ingredients, then add to potato mixture, blending well; place in casserole that's been sprayed with Pam; add topping (3 cups crushed Corn Flakes and 1/4 cup melted butter). Bake 45 minutes at 350 degrees.
