NO CRUST SWEET POTATO PIE 
4 med. size sweet potatoes, cooked & mashed (about 3 c.)
1 c. sugar
1/2 c. all purpose flour
1/2 c. butter, softened
1 egg
1 tsp. almond extract
Whipped topping

Combine all ingredients except topping in a large mixing bowl. Beat at medium speed of electric mixer until well blended. Spoon mixture into a 9" or 10" pie plate. Bake at 450 degrees for 25 minutes or until lightly browned. Serve warm or cool with a dollop of topping.
