CORN FRITTERS 
3/4 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
2 eggs, beaten
1/4 c. milk
1 (12 oz.) can vacuum packed corn
1 tbsp. melted butter
1/8 tsp. nutmeg

In a bowl, combine all dry ingredients and mix. Add liquid to this and mix well. Lastly, add corn.

Lightly grease skillet and over medium high heat, drop batter by rounded tablespoons full. Cook 2 or 3 minutes on each side until golden brown. Serve with maple syrup if desired. Yield: 16 (3-inch) cakes.
