ZUCCHINI AU GRATIN 
1 1/2 lbs. zucchini
Salt
1/2 c. water
2 eggs
1 tbsp. butter
1 c. heavy cream
1/4 c. grated Gruyere cheese
Pepper

Wash zucchini, trim the ends and slice in 1/4 inch slices. Put in pan with water, add salt, cover and cook over moderate heat until water is evaporated. Mix eggs, cream and grated cheese together, reserve 1 tablespoon cheese.

Season with salt and pepper. Transfer zucchini to casserole. Pour on the cream mixture and sprinkle top with reserved cheese. Dot top with small pieces of butter and bake in hot 400 degree oven for 10 minutes or until egg mixture is set. Serves 4 to 6.
