SUMMER SKILLET CASSEROLE 
2 lb. ground beef
1 green pepper
2 tomatoes
1 tsp. salt
2 med. zucchini
1 onion
1 lb. cheese
1/8 tsp. pepper

In skillet, brown beef, green pepper, onion, salt, and pepper. Drain off liquid. Add and mix tomatoes. Layer zucchini on top of meat mixture. Cover and cook until zucchini is almost transparent. Drain excess liquid carefully. Top with cheese and return to burner for 5 minutes. Let stand for 10 minutes before serving right out of the skillet.
