FRIED ZUCCHINI 
3 c. shredded, unpeeled zucchini
1/2 c. shredded cheddar cheese
3 tsp. snipped parsley
1 clove garlic, finely chopped
1 egg
1 tsp. salt
Dash of pepper
1 c. Bisquick mix

Heat 1/4" to 1/2" oil in skillet. Mix all ingredients together. Drop by teaspoonful into patty size into skillet. Fry 1 minute on each side or until golden brown. Drain on paper towels. Serves 5 to 8.
