STUFFED YAMS 
6 med. yams, washed & dried
4 tbsp. butter, softened
2 tbsp. brown sugar
1 tsp. salt
Orange juice
Walnut or pecan halves

Bake yams in a 425 degree oven 40 minutes until done. Remove from oven. Cut top from top of each yam and scoop out inside, taking care not to break the shells. Add butter, brown sugar, salt and enough orange juice to moisten; beat until fluffy. Spoon mixture into shells. Return to oven and bake 15 or 20 minutes until heated through. Garnish each with a nut half. Makes 6 servings.
