EASY HOT CHEESE PITA POCKETS 
8 tomato slices
2 whole wheat pita bread rounds, cut in half
1/4 lb. Velveeta cheese, cubed
1/4 lb. meat slices, cut into strips (can use ham, roast beef, chicken or turkey)
1/2 c. broccoli flowerets
1/4 c. bean sprouts
1/4 c. shredded carrots
1 tbsp. green onion slices
1/2 c. plain yogurt
2 tsp. spicy brown mustard

Place tomato slices in pita bread. Toss together cheese, meat, broccoli, bean sprouts, carrots and green onion. Fill each pita bread with 1/2 cup vegetable mixture. Microwave on High 3 to 5 minutes or until cheese begins to melt. Serve with combined yogurt and mustard. Makes 4 sandwiches. Prep Time: 15 minutes. Cooking Time: 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
