SWEET POTATO PUDDING 
2 c. grated raw sweet potatoes, peeled, then grated
1 c. sugar
1/2 c. milk
2 eggs
1 tsp. cinnamon
1/2 tsp. ground cloves
1/2 c. chopped pecans
1/4 c. sherry
1 tbsp. butter, cut into small pieces

Heat oven to 350°F. Spray baking dish with cooking spray. Mix all ingredients and pour into dish. Dot surface with butter pieces.

Bake 30 minutes or until center is firm.
