HADDOCK AND POTATO PIE 
1 lb. haddock
1 lb. potatoes, cooked and slice 1/2 inch thick
1 lg. chopped onion
2 tbsp. butter
1 egg yolk
2/3 c. sour cream
1/3 c. bread crumbs
Salt and pepper

Cut haddock into large fork sized chunks. Dry thoroughly. Keep sliced potatoes warm. Saute onion in butter. Grease a 1 1/2 quart casserole. Arrange alternately, layers starting with potatoes, then fish, onions, and some melted butter. Continue until casserole is full, ending with potato layer.

Beat egg yolk, add sour cream, salt and pepper. Pour over the layers in casserole. Sprinkle with bread crumbs. Bake at 350 degrees for 30 to 40 minutes or until top is brown.

My children, who are 5 yrs old, love this recipe. We call it fish casserole. The only difference is I use a few crushed Ritz crackers instead of bread crumbs. Delicious and easy!! The recipe says to dry fish thoroughly and that is very important or it gets a bit runny.
