FLAT BREAD 
2 C graham flour
1/2 C shortening
1 C buttermilk
1 C hot water
1/2 tsp salt
1/2 tsp. baking soda
1 tbsp baking powder
4 C white flour
1/4 C sugar

Heat water and buttermilk together. Add shortening and stir with dry ingredients to make a very stiff dough. Roll dough as thinly as possible using whole wheat flour to flour the board for rolling.

Bake on rack in a hot oven (400°FF). When flat bread begins to brown, turn it over and brown on other side.

This makes a very large quantity. For an average serving, use one half of the amounts specified.
