ENCHILADAS 
20 sm. flour tortilla shells
2 cans mild enchilada sauce
1 1/2 cans milk (use can from sauce)
1/2 lb. ground beef
2 c. cheese (mild cheddar & Monterey Jack)
Black olives, sliced for topping
1/2 c. onion, diced

Brown meat and onion. Heat enchilada sauce and milk until warm. Dip tortillas in sauce then place meat and cheese, then roll up and place in a non stick baking dish. When finished rolling shells, pour remaining sauce over top then top with remaining cheese and olives. Bake at 350 degrees for 45 minutes to 1 hour. Serve with sour cream if desired.
