ESPRESSO COOKIES 
2/3 c. butter, room temperature
1 c. sugar
1 tbsp. instant espresso powder
1 egg
1/2 tsp. vanilla
2 1/4 c. flour
3/4 tsp. baking powder
1/4 tsp. salt
1/2 c. semi-sweet chocolate chips

Preheat oven to 350 degrees. Beat butter, sugar and espresso powder on high for 3 minutes. Beat in egg and vanilla. On low, stir in flour, baking powder and salt.

Using hands gather dough into a ball. Between 2 sheets of wax paper, roll dough 1/4 inch thick. Using floured cutter cut cookies into shapes. Put on an ungreased cookie sheet and bake about 12 minutes, edges should be light brown but cookie should be soft.
