SPINACH CASSEROLE 
4 tbsp. butter, melted in a 9x13 inch pan
3 eggs
1 c. flour
1 c. milk
1 tsp. salt
1 tsp. baking powder
2 pkgs. (10 oz.) frozen spinach, thawed and drained
1 lb. shredded Monterey Jack cheese

Melt butter in pan. Add eggs to flour, milk, salt, baking powder mixture. Stir in cheese and spinach. Pour into 9x13 pan and bake at 350 degrees for 35-45 minutes. Freezes well. 6-8 servings.
