PEANUT BRITTLE | |
2 c. sugar 1 c. white corn syrup 1/2 c. hot water 3 c. raw peanuts 2 tsp. butter 1 tsp. vanilla 2 tsp. baking soda Dash of salt Boil sugar, corn syrup and water until ball is formed. Add peanuts and butter. Stir constantly over medium-low heat until mixture becomes a brownish gold color. Remove from heat and add vanilla and soda. QUICKLY blend well. Spread flat onto greased pan. When cool, break into pieces. Makes approximately 4 cups. I use a candy thermometer and cook to hard ball stage on first part and on second cooking I cook to 300 hard crack stage. |
