TURKEY FRAME SOUP 
1 turkey carcass with some meat
1 (16 oz.) can tomatoes
1 tsp. dried oregano, crushed
1/2 tsp. dried thyme, crushed
Homemade noodles, to be added later
1 onion, quartered
8 c. fresh vegetables

Celery, carrots, onion, rutabaga, potato.

Combine 1 beaten egg, 2 tablespoons milk and 1/2 teaspoon salt. Add enough all- purpose flour to make a stiff dough (about 1 cup). Roll very thin on floured surface; let stand 20 minutes. Roll up loosely; slice 1/4" wide. Unroll, spread, and let dry 2 hours. Store in container until needed.

Place turkey carcass in Dutch oven. Add 5 quarts water, onion, and 4 teaspoons salt. Cook, covered 1 1/2 hours.

Remove turkey carcass; cool slightly. Remove meat from bones. Remove onions from broth (strain broth through strainer). Add turkey to broth, add the vegetables and herbs. Bring to boiling; cover and simmer 45 minutes. Add homemade noodles, and boil 15 minutes. Makes 16 cups.
