BOO'S DELIGHT | |
1 lb. fish steak (e.g. salmon or sword fish) 1/2 c. soy sauce 1 tbsp. sesame oil 1 tbsp. honey 1 tsp. dill weed Juice of 1/2 lemon 2 plum tomatoes (coarsely chopped) 1/2 med. onion (coarsely chopped) 1/2 green pepper (coarsely chopped) Combine soy sauce, sesame oil, honey, dill weed and lemon juice. Mix well. Generously brush all sides of the fish with sauce. Place fish in the middle of a large piece of heavy duty aluminum foil (or 2 sheets of thin foil). Surround the fish with chopped vegetables. (Make sure not to cover the top of the fish with vegetables.) Fold up foil and wrap tightly. Place on barbeque over moderate heat (or about 5 inches from heat). Cook for about 10 minutes per inch of thickness or until fish flakes apart easily when tested with a fork. |
