MILE-HIGH BISCUITS 
3 c. sifted all-purpose flour
4 1/2 tsp. baking powder
3/4 tsp. cream of tartar
2 1/2 tbsp. sugar
3/4 tsp. salt
3/4 c. shortening
1 egg, lightly beaten
1 c. milk

Preheat oven to 450 degrees; lightly grease a baking sheet. In a large mixing bowl, sift together flour, baking powder, cream of tartar, sugar and salt. Cut shortening into flour mixture until it resembles coarse meal. Add egg to milk; add liquid mixture to dry ingredients and mix with fork until dough holds together.

Turn out onto floured board; knead lightly with floured fingers. Roll dough out to 1-inch thickness; cut into biscuits with floured biscuit cutter. Place on greased baking sheet. Bake for 12 minutes.
