MARDI GRAS RICE 
3 c. cooked rice
1 c. drained, cooked green peas
1/2 c. sour cream
3 tbsp. diced pimiento
1 tsp. salt
1/2 tsp. seasoned pepper

Combine all ingredients in saucepan. Heat but do not boil. Microwave: Combine all ingredients except sour cream in a baking dish. Cover, cook on high for 4 minutes. Stir after 2 minutes. Stir in sour cream and let stand for 2 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
