EASY CORDON BLEU | |
2 boneless chicken breasts 4 thin slices of ham 4 slices American cheese 4 tbsp. butter 1 tsp. lemon pepper 1/2 c. grated Swiss cheese Place chicken between two sheets of waxed paper. Pound with a mallet to flatten them. On each piece, place a slice of ham and a piece of cheese. Pull up sides of chicken and cover ham and cheese. Secure with toothpicks. Place butter in a 9 inch round glass dish. Microwave to melt. Add lemon pepper. Place chicken pieces in seasoned butter. Spoon butter over chicken. Cover with waxed paper. Microwave 2 minutes. Spoon liquid over chicken. Cover with waxed paper and microwave another 6-8 minutes. Sprinkle grated cheese over chicken. Microwave 2 minutes or until cheese is melted. Let stand covered 3-5 minutes. |
