HONEY PECAN CAKE | |
1 tbsp. vinegar 1 c. milk 1 c. oil 1 1/2 c. sugar 3 eggs 1 tsp. vanilla 2 c. flour 3 tsp. baking powder 1/2 tsp. baking soda 1 tsp. cinnamon 1/4 tsp. cloves 1/2 c. chopped pecans Combine 1 tablespoon vinegar with milk to make 1 cup and set aside. Stir oil into sugar; add eggs and vanilla. Beat 1 minute at medium speed. Sift flour, baking powder, soda, cinnamon, and cloves; add to creamed mixture alternately with sour milk. Beat 1 minute; stir in pecans. Bake in 10-inch tube pan in 350 degree oven for 40 minutes. Let stand in pan 10 minutes. Remove from pan; prick holes in cake. Drizzle with honey syrup. HONEY SYRUP: Boil together 1/2 cup honey, 1 tablespoon water, and 1 tablespoon lemon juice. |
