ENGLISH MUFFIN BREAD 
3 c. flour
1 pkg. yeast
1 tbsp. sugar
3/4 tsp. salt
1 1/4 c. warm water
Corn meal

Combine 1 cup flour, yeast, sugar, salt in large bowl. Add the water and beat on low speed for 3 minutes. Stir in enough of the remaining flour to make a very soft dough. Shape dough into a ball and place it in a well greased bowl, turning to grease all sides. Cover bowl and let rise in a warm place until doubled in bulk. Punch down and shape into a loaf. This will make 1 large or 2 small loaves. Place the dough in a greased pan that has been sprinkled with cornmeal. Sprinkle top of dough with more cornmeal. Cover pan and let rise again until doubled, about 30 minutes. Bake at 400 degrees for 35 to 40 minutes. Remove bread from pan and let cool on cookie sheet or on the inverted pan.
